Here we are cooking with smoke using the Direct
Method. Notice the food is placed directly over
the coals. In this photo you seesmoker box on the
left. The smoker box is filled with maple wood
chips and placed directly over the coals. The heat
smolders the wood chips and forces the smoke
throughout the smoking chamber. You can use this
same method using a standard charcoal grill having
top and bottom vents. See the smoke? And how about
those chicken drumettes. DANG! Mmmmmmmmm Good!
